Makes 6 servings1kg of Beef Chuck, cut into 3cm cubes
410g Can of Crushed Tomatoes
½ Cup of Beef Stock
2 Carrots, cut into chunks
2 Cloves of Garlic, crushed
2 Bay Leaves
1 Onion, chopped
140g Tub of Tomato Paste
1 Tablespoon of Chopped Fresh Rosemary
3 Potatoes, cut into chunks
1 Cup of Frozen Garden Peas
Sourdough, Ciabatta, or a Rustic Italian Loaf (To Serve)
Steamed Green Vegetables (To Serve)
Directions
- Place the beef, crushed tomatoes, beef stock, carrots, garlic, bay leaves, onion, tomato paste, and rosemary into a slow cooker. Stir well to combine.
- Cover and cook on low for 5 hours.
- Add the potatoes and stir through. Cover and continue cooking on low for a further 1 hour, or until the potatoes are tender.
- Add the frozen peas and gently stir to combine.
- Turn off the slow cooker and allow the stew to stand for 15 minutes, letting the residual heat warm the peas through.
- Remove and discard the bay leaves.
- Serve hot with crusty bread and steamed green vegetables on the side.
