Honey Soy Noodle Stir Fry

Quick and easy honey soy noodles with tender chicken and fresh vegetables, tossed in a rich, savoury sauce for the perfect weeknight stir-fry.

Makes 4 servings
500 Grams Chicken Breast, thinly sliced (or Chicken Thigh Fillets)
2 Tablespoons of Oyster Sauce
1 Tablespoon of Vegetable Oil (Or Canola Oil)
2 Spring Onions, sliced (or Chives or Shallots)
2 Cups Broccoli Florets (or Broccolini)
1 Capsicum, thinly sliced (or Yellow Capsicum)
2 Tablespoons Soy Sauce (or Tamari)
2 Tablespoons Sweet Soy Sauce (or Honey Soy Sauce)
2 Packets Instant Noodles (or Fresh Egg Noodles or Rice Noodles)

Directions

  1. In a medium bowl, combine the chicken with the oyster sauce and toss to coat. Set aside for 10 minutes to marinate.
  2. Heat the vegetable oil in a large frying pan or wok over high heat.
  3. Add the chicken and stir-fry for 5–6 minutes, or until golden and cooked through.
  4. Add the spring onions, broccoli and capsicum. Stir-fry for 3–4 minutes, or until the vegetables are just tender while still retaining a little crunch.
  5. Meanwhile, cook the instant noodles according to the packet instructions. Drain well.
  6. Add the cooked noodles, soy sauce and sweet soy sauce to the pan. Toss everything together until evenly coated and heated through.
  7. Serve immediately and enjoy.
