

Honey Soy Noodle Stir Fry

Makes 4 servings500 Grams Chicken Breast, thinly sliced (or Chicken Thigh Fillets)
2 Tablespoons of Oyster Sauce
1 Tablespoon of Vegetable Oil (Or Canola Oil)
2 Spring Onions, sliced (or Chives or Shallots)
2 Cups Broccoli Florets (or Broccolini)
1 Capsicum, thinly sliced (or Yellow Capsicum)
2 Tablespoons Soy Sauce (or Tamari)
2 Tablespoons Sweet Soy Sauce (or Honey Soy Sauce)
2 Packets Instant Noodles (or Fresh Egg Noodles or Rice Noodles)
Directions
- In a medium bowl, combine the chicken with the oyster sauce and toss to coat. Set aside for 10 minutes to marinate.
- Heat the vegetable oil in a large frying pan or wok over high heat.
- Add the chicken and stir-fry for 5–6 minutes, or until golden and cooked through.
- Add the spring onions, broccoli and capsicum. Stir-fry for 3–4 minutes, or until the vegetables are just tender while still retaining a little crunch.
- Meanwhile, cook the instant noodles according to the packet instructions. Drain well.
- Add the cooked noodles, soy sauce and sweet soy sauce to the pan. Toss everything together until evenly coated and heated through.
- Serve immediately and enjoy.
