Makes 4 servings
1 Cup of Self-raising Flour
3 Tablespoons of Olive Oil
2/3 Cup of Water
1/4 Cup of Pizza Sauce or Pizza Paste
1 Cup of Grated Mozzarella Cheese
1/2 Cup of Sliced Ham
1/2 Cup of Pepperoni or Salami
1/2 Cup of Capsicum, sliced
1/2 Cup of Sliced Mushrooms
Salt, to taste
Cracked Black Pepper, to taste
Basil Leaves (Optional)

Directions

  1. Heat a cast iron or heavy-based frying pan over medium heat. Add 1 tablespoon of olive oil and swirl to grease the base.
  2. Add the self-raising flour to the pan, then pour in the remaining olive oil and water. Season with salt and cracked pepper.
  3. Mix together in the pan until a soft dough forms. Press the dough evenly across the base and slightly up the sides (about 2cm thick).
  4. Spread the pizza sauce evenly over the dough.
  5. Sprinkle over the grated mozzarella cheese, then add your choice of toppings such as sliced ham or pepperoni, and vegetables like mushrooms or capsicum. Avoid overloading the base.
  6. Cover with a lid and cook over medium heat for 10 minutes, or until the base is cooked through and the cheese has melted.
  7. Carefully slide the pizza onto a board. Rest for 2 minutes before slicing into wedges. Top with fresh basil leaves if desired and serve.
