Crumbed Fish Sliders with Coleslaw

Makes 10 servings
1 cup panko crumbs
1/2 cup parmesan cheese
2 eggs
1/2 cup plain flour
3 tbsp olive oil
300g barramundi fillets (skin off), cut into 3 inch x 3 inch pieces
1 x bag Community Co Coleslaw Kit 500g
2 tomatoes, sliced
10 x brioche buns

Directions

1) Preheat oven to 180°C. Line baking tray with baking paper.

2) Combine panko crumbs, cheese, oil, salt and pepper in a medium bowl. Beat eggs in a small bowl. Put flour in a separate bowl.

3) One at a time, coat each piece of fish with flour, then egg and then panko crumbs mixture, and place on baking tray.

4) Once all fish is crumbed, place tray in oven and bake for about 15 minutes, until crumb coating is golden and fish flesh is white.

5) While fish is cooking, mix together Coleslaw Kit with included dressing in a bowl.

6) To build your burgers, slice the brioche buns, top with a generous serving of coleslaw, two slices of tomato and a piece of crumbed fish.
