1/3 cup grated zucchini (squeezed of excess liquid) + 1 extra for garnish
120 g self-rising flour
1 1/3 cup grated cheddar cheese
Directions
- Preheat oven to 180C. Line a 20 x 30cm baking dish with baking paper.
- In a large bowl, whisk the eggs, until light and fluffy, 2 – 3 minutes.
- Add the remaining ingredients and season.
- Pour the contents into the prepared dish.
- Bake for 30 minutes or until nice and brown. Allow cooling before slicing to serve.
