Bacon, Egg and Onion Tart

Make this easy bacon, egg and onion tart with golden puff pastry, crispy bacon, caramelised onions and baked eggs. Perfect for brunch, lunch or an easy family dinner.

Makes 2 servings
3 Rashers of Bacon
4 Tablespoons of Pizza Sauce
1 Onion, sliced thinly
3 Eggs
1 Butter Puff Pastry

Directions

  1. Heat a frying pan over medium-high heat. Cook bacon until golden and crisp, then transfer to a plate and set aside.
  2. Using the same pan, add the sliced onions and cook for 10–12 minutes, stirring occasionally, until softened and caramelised.
  3. Preheat oven to 190°C and line a baking tray with baking paper.
  4. Place the puff pastry sheet onto the prepared tray. Using a sharp knife, score a border around the edge of the pastry, leaving a 2-centimetre margin and taking care not to cut all the way through.
  5. Use a fork to prick the centre of the pastry several times to prevent it from puffing up during baking.
  6. Bake for 8–10 minutes, or until the pastry is lightly golden and beginning to puff.
  7. Remove from the oven and allow to cool slightly.
  8. Spread the pizza sauce evenly over the centre of the pastry, leaving the border exposed. Top with the caramelised onions and bacon.
  9. Carefully crack the eggs over the filling.
  10. Return to the oven and bake for a further 10–15 minutes, or until the eggs are cooked to your liking and the pastry is golden and crisp.
  11. Remove from the oven and allow to cool for a few minutes before slicing and serving.
