

Smoked Salmon Salad

Makes 10 servings2 Iceberg Lettuce, cut into wedges (For Salad)
4 Cucumbers, sliced into strips (For Salad)
200g Baby Rocket (For Salad)
1 Bunch of Radish, sliced (For Salad)
400g Smoked Salmon (For Salad)
½ Bunch of Dill to serve (For Salad)
For Tartar Sauce: 2 tbsp capers, chopped
2 Tablespoon of Cornichons or Pickles, chopped (For Tartar Sauce)
1 Shallot, diced (For Tartar Sauce)
2 Tablespoon of Dill, roughly chopped (For Tartar Sauce)
2 Tablespoon of Lemon Juice (For Tartar Sauce)
1 Tablespoon Dijon Mustard (For Tartar Sauce)
2 Cups of Natural Greek Yoghurt (For Tartar Sauce)
Directions
1. To make the dressing, add the capers, cornichons, shallots, dill, lemon juice, mustard with the yoghurt in a bowl. Mix well to combine then refrigerate until ready to use.
2. Assemble the salad ingredients on a large platter and dress with the tartar dressing.
SWAP: Can use any smoked or gravlax fish of your choice or cooked prawns
